This is a caesar dressing that I will make every time I want a Caesar salad. This recipe comes originally from my mom who is a huge home cook. My mom made dinner every night growing up and whenever there was a salad on the table there was a good chance it had this no anchovy caesar dressing on it. Typically she would serve this dressing over some Romaine with croutons and shaved Parmesan but there’s several other ways too. 

One of my favorite ways to serve this dressing is over arugula with white onions, avocado, tomatoes, and shaved Parmesan. This no anchovy caesar dressing is so light and lemony anything pairs well with it. I pair it with pasta dishes, steak, chicken, and even fish.

No anchovy caesar dressing was a staple in my college apartment. It takes less than 5 minutes to make and was the perfect snack thrown over romaine in between classes or the perfect side dish with any meal we were making. A few times we even made this as a main and added chicken to the salad for extra protein. No matter what this dressing is served with it over it is going to be a hit. 

One of my favorite dishes to pair with this dressing is my Shrimp and Feta 20-Minute Pasta Dinner. Both the no anchovy caesar dressing and the shrimp and feta pasta are very quick to come together. I usually will start the pasta sauce and as it’s simmering I will make the dressing. This way the pasta and dressing are both finished in under 20 minutes and there and there is a fast and delicious meal ready on the table.

For the best flavor in this no anchovy caesar dressing, I try to use a block of Parmesan cheese and then let the food processor do the work for me. This way I have better quality cheese, but I also don’t have to grate it myself. I also specify in the recipe ingredient list to use Dijon mustard, but if you don’t have any on hand regular yellow mustard could work as well. I typically will use Grey Poupon Dijon Mustard, but I think any Dijon would taste great.

This no anchovy caesar dressing is so lemony and refreshing, I love to enjoy it as a side during the summertime, but I also eat it on salads throughout the year. I’ve always loved Caesar dressing, but have been slightly put off by the anchovies. The beauty of this dressing is that you get the same great taste of a classic caesar dressing but with none of the fishy flavor coming from the anchovy. I promise if you give this dressing a try it will become a staple in your cooking regimen. Everyone I’ve ever served this dressing to has asked for this recipe and then made it repeatedly themselves. It really is so easy and delicious.
