Step 1:

  • Take a cup of water in a vessel
  • Step 2:

  • add the orange peel slices
  • Step 3:

  • boil for 10 mins
  • Step 4:

  • strain in a colander
  • Step 5:

  • (this removes the sour taste of the orange peel)
  • Step 6:

  • Step 7:

  • boil rice in a rice cooker or however you do it usually. Keep aside
  • Step 8:

  • take purified butter in a pan. Heat the purified butter
  • Step 9:

  • add onion slices and saute until translucent.
  • Step 10:

  • add 11/2 teaspoon sugar and saute to caramelize
  • Step 11:

  • add cashew nuts, carrot slices, orange peel slices and remaining sugar and fry until carrot and orange is cooked.
  • Step 12:

  • add the boiled rice and mix well.
  • Step 13:

  • garnish with mint leaves and coriander leaves.
