J’s Veggie Curry

A healthy, easy, cheap veggie curry!

Ingredients

  • Onion
  • 4 Carrots
  • Cauliflower
  • Green beans
  • Peas (frozen)
  • 1 Can Of Lentils
  • Tomatoes (400g Can)
  • Curry Powder
  • 300ml Stock

Instructions

  1. 1 = Heat Frying Pan (use non stick or just add a dash of oil/non stick spray)

  2. 2 = Add chopped onion, chopped carrots, green beans, cauliflower and curry powder and stir and cook for 2 minutes

  3. 3 = Add tomatoes, lentils and stock and bring to the boil

  4. 4 = Reduce the heat once boiled and simmer for 40 minutes, stirring occasionally

  5. 5 = Add peas and simmer for 15 minutes

  6. 6 = SERVE
