Leek and potato soup

Ingredients
- 2 tbsp oil
- 2 leeks (chopped)
- 1 small onion
- 3-5 potato
- 600ml chicken stock
- salt and pepper
Instructions
1) Heat the oil in a pan, add the chopped leek and onion, cook gently for about 7mins stirring occasionally so they don’t stick to the bottom of the pan.
2) Add the potato, stirring occasionally for 2-3mins. Add the stock and bring to the boil the reduce the heat. Season with salt and pepper. Simmer for around 30mins.
