Leek and potato soup

Simple and cheap but so tasty

Ingredients

  • 2 tbsp oil
  • 2 leeks (chopped)
  • 1 small onion
  • 3-5 potato
  • 600ml chicken stock
  • salt and pepper

Instructions

  1. 1) Heat the oil in a pan, add the chopped leek and onion, cook gently for about 7mins stirring occasionally so they don’t stick to the bottom of the pan.

  2. 2) Add the potato, stirring occasionally for 2-3mins. Add the stock and bring to the boil the reduce the heat. Season with salt and pepper. Simmer for around 30mins.
