Leek & Potato Soup Serves 2 By Guest Contributor April 13, 2011 Soup Preparation Time Cook Time Servings0Ingredients25g butter1 leek1 small onion2 meduim size potatoes450ml chicken or veg stocksalt and pepper parsleyInstructions Step 1: 1. Heat half of the butter in a large pan over a low heat Step 2: 2. Add the chopped leek and diced onion and then stir for about 5 mins until soft Step 3: 3. Add the chopped potatoes to the pan and cook for 3 mins. Step 4: 4. Add the chicken/veg stock t the pan stir and bring to boil. Step 5: 5. Lower the heat, cover the pan with the lid and simmer for 30 mins Step 6: 6. Season to taste with saalt and pepper, stir in the remaining butter and remove from the heat Step 7: 7.
