Leeky Shepherds Pie

cheesy, filling and delicious and no mince!!

Ingredients
- 2 Baking Potatoes
- 3 Lage leeks
- 1 Cup of finely sliced mushrooms
- 1 Carrot finely sliced
- Big ol’ handful of spinach
- Salt and Pepper
- 1/2 cup soymilk (or normal if you prefer)
- 1 glass of white wine (cheapo stuff works as well as yummy wine)
- 1 tblspn soy butter
Instructions
Preheat oven to GasMark 4
Cover pie dish bottom with butter
Peel, chop and boil potatoes for 15mins
Chop leeks, carrot and mushrooms
Heat wine in deep frying pan
Chuck all veg in and sauté for 10 mins
Remove from heat seasons with salt and pepper
Chuck in a big handful o spinach and mix so it wilts
Place in bottom of pie dish
Drain potatoes add a bit of milk and butte, pepper and mash well
spread on top of veg and bake for 30 mins until crispy and brown on top
Perfect the next day as well! 🙂
