PREP 0 min COOK 0 min TOTAL 0 min YIELD 0 JUMP TO RECIPE SHARE Facebook Share on Facebook Twitter Share on Twitter Pinterest Share on Pinterest Email Share via Email Ingredients2 Baking Potatoes3 Lage leeks1 Cup of finely sliced mushrooms1 Carrot finely slicedBig ol’ handful of spinachSalt and Pepper1/2 cup soymilk (or normal if you prefer)1 glass of white wine (cheapo stuff works as well as yummy wine)1 tblspn soy butterInstructions Step 1: Preheat oven to GasMark 4 Step 2: Cover pie dish bottom with butter Step 3: Peel, chop and boil potatoes for 15mins Step 4: Chop leeks, carrot and mushrooms Step 5: Heat wine in deep frying pan Step 6: Chuck all veg in and sauté for 10 mins Step 7: Remove from heat seasons with salt and pepper Step 8: Chuck in a big handful o spinach and mix so it wilts Step 9: Place in bottom of pie dish Step 10: Drain potatoes add a bit of milk and butte, pepper and mash well Step 11: spread on top of veg and bake for 30 mins until crispy and brown on top Step 12: Perfect the next day as well! 🙂 Share: Facebook Share on Facebook Twitter Share on Twitter Pinterest Share on Pinterest Email Share via Email
