Lemon Chicken and Homemade Wedges

Ingredients

  • (Chicken)
  • Chicken (chunks or strips)
  • Olive Oil
  • Lemons
  • Coriander
  • Salt / Pepper
  • Chili Powder
  • (Wedges)
  • Potatoes
  • Olive Oil
  • Seasoning

Instructions

  1. – Chicken

  2. Put a portion of chicken in a bowl

  3. Add a little olive oil

  4. Add half a lemons juice per portion

  5. Add some lemon zest (grated lemon rind)

  6. Add some corriander and salt and pepper

  7. Add some chili powder – just a wee bit for a some heat

  8. Mix everything together

  9. Leave for about 20 mins minimum to allow the flavors to set in

  10. After this time fry the chicken until cooked and serve with the wedges!

  11. – Wedges

  12. Scrub and wash a couple of potatoes per person

  13. Cut into wedges shapes – your shout at how thick they are (they go more crispy the thinner they are)

  14. Boil them in a pan until soft

  15. Drain the water and put back in the pot

  16. add a little olive oil and the seasoning

  17. (you could use bbq sauce, any herbs or pesto – whatever you fancy)

  18. Toss them so they are all coated

  19. Put on a baking tray and cook in the oven around 180 degrees until crispy!
