Lemon Yogurt Couscous Cake

Ingredients
- 4 oz plain dry couscous
- 4 oz water
- 5 tsp lemon curd
- Juice and zest of 1 lemon
- 1 small container of vanilla yogurt
- 1 beaten egg
Instructions

Put the couscous in a pot on the stove and cover with a 1:1 ratio of water. Cook until all the liquid is absorbed.

Add the lemon curd, lemon juice, zest and yogurt to a bowl. Mix well until combined.

Beat an egg gently and fold into the wet ingredients.

Remove the couscous from heat and let it cool for about 5 minutes.

Add the cooked couscous to a blender or food processor and pulse until it creates small, thin beads that can be folded into cake batter.

Fold in the couscous mixture to the wet ingredients and combine well.

Spoon batter into a cake tin or some kind of oven-proof dish.

Put in the oven for 30-40 minutes on 400 degrees °F.

Remove when puffed up and slightly brown. Let cool before serving.
