Lentil and Carrot Soup Vegi friendly Delicious, Healthy Soup By Guest Contributor August 10, 2010 Soup Preparation Time Cook Time Servings0Ingredients(measurements are using average size coffeemug)1 mug red lentilstablespoon olive oil1 small green onion (diced)2-3 carrots (washed peeled and diced)1 small potato (as above)1 veg stock cubemixed herbs (about a pinch)Instructions Step 1: Wash and drain lentils. Step 2: Heat the oil in a large pot and slightly cook the onion, add the potato and carrot and cover while you make up the stock, Step 3: Stir the stock, lentils and herbs. Step 4: bring to boil and simmer for about 20 mins, til veg is tender Step 5: Liquidise and serve
