Step 1:

  • Wash and drain lentils.
  • Step 2:

  • Heat the oil in a large pot and slightly cook the onion, add the potato and carrot and cover while you make up the stock,
  • Step 3:

  • Stir the stock, lentils and herbs.
  • Step 4:

  • bring to boil and simmer for about 20 mins, til veg is tender
  • Step 5:

  • Liquidise and serve
