Lentil Bolognaise

Ingredients

  • Oil
  • 1 large onion
  • 1 or 2 cloves of garlic
  • 400g chopped tomatoes (1 tin)
  • Few leaves of basil (optional)
  • 1 teaspoon of cinnamon
  • 250g red split lentils
  • 400ml (ish – use as much as you need) water

Instructions

  1. 1. Heat oil and fry onion and garlic until soft.

  2. 2. Add tomatoes, herbs, cinammon, lentils, water and bring to boil.

  3. 3. Simmer with lid on for 25 mins.

  4. 4. 10 mins before sauce is cooked, boil water and cook spaghetti.

  5. 5. Drain, season sauce, and serve!
