Light, airy microwave cake

Just like a quick Victoria Sponge!!!

Ingredients

  • 6 tablespoons of plain flour
  • 3 tablespoons of milk
  • 3 tablespoons of oil (olive oil, almond oil, sunflower oil – any will work)
  • 1 egg
  • 3 tablespoons of sugar

Instructions

  1. In a microwaveable bowl, whisk the flour and milk.

  2. Add the sugar, oil and egg.

  3. Whisk thoroughly for about 5 minutes, until there are plenty of bubbles in the mix.

  4. Place in the microwave.

  5. Leave in for 3 minutes.

  6. When you remove, the mix should have risen considerably, and should be a pale, creamy beige.

  7. Sprinkle some sugar over the top.

  8. ENJOY!
