Ingredients

  • Makes 18
  • 50ml of vegetable or sunflower oil
  • 150g white caster sugar
  • 2 medium eggs
  • 1 teaspoon of vanilla extract
  • 50g cocoa powder
  • 1/2 teaspoon of baking powder
  • 80g plain flour

Instructions

  1. 1. Heat the oven to 175c

  2. 2. Mix the oil and sugar in a large bowl. Add the eggs and vanilla extract and mix well.

  3. 3. Carefully add the cocoa powder, baking powder and flour and mix thoroughly.

  4. 4. Grease a baking tin and then fill it with the brownie mixture.

  5. 5. Cook in the oven for about 15 minutes

  6. These will keep fresh in the fridge for about a week and also freeze well
