Step 1:

  • first dice up the potato & fry in the oil in a frying pan.
  • Step 2:

  • whisk the eggs; the more you whisk, the lighter & fluffier it will end up.
  • Step 3:

  • dice up the pineapple.
  • Step 4:

  • once the potato is crispy/browned, add the egg, followed by the sweetcorn & pineapple. stir around so that its all mixed in evenly, and fluff up the egg.
  • Step 5:

  • keep it on the heat until the underneath is browned, then either flip it over to do the other side, or place under the grillo brown off the top.
  • Step 6:

  • DONE!!!

  • you could also add peas, onions, meat etc
