first dice up the potato & fry in the oil in a frying pan.
Step 2:
whisk the eggs; the more you whisk, the lighter & fluffier it will end up.
Step 3:
dice up the pineapple.
Step 4:
once the potato is crispy/browned, add the egg, followed by the sweetcorn & pineapple. stir around so that its all mixed in evenly, and fluff up the egg.
Step 5:
keep it on the heat until the underneath is browned, then either flip it over to do the other side, or place under the grillo brown off the top.
