Simple greek salad topped jackets

Ingredients

  • ? 2 mccain ready baked jackets
  • ? 100g greek feta cheese, crumbled
  • ? 150g tin adzuki beans, drained and rinsed
  • ? 2 spring onions, sliced
  • ? 100g chopped cucumber
  • dressing:
  • ? 3 tbsp tomato ketchup
  • ? 2 tbsp readymade low fat french dressing
  • ? 1 tsp hot chili sauce

Instructions

  1. 1. cook the mccain ready baked jackets according to the pack instructions

  2. 2. mix the dressing ingredients together and season to taste

  3. 3. mix the remaining ingredients and drizzle with the dressing

  4. 4. use to top your hot mccain ready baked jackets

  5. top tip:

  6. you can use your favourite beans here, butter beans, black beans, etc all work well.
