Mccain Jacket With Feta & Bean Salad

Simple greek salad topped jackets

Ingredients

• ? 2 mccain ready baked jackets
• ? 100g greek feta cheese, crumbled
• ? 150g tin adzuki beans, drained and rinsed
• ? 2 spring onions, sliced
• ? 100g chopped cucumber
• dressing:
• ? 3 tbsp tomato ketchup
• ? 2 tbsp readymade low fat french dressing
• ? 1 tsp hot chili sauce

Instructions

STEP 1:

1. cook the mccain ready baked jackets according to the pack instructions

STEP 2:

2. mix the dressing ingredients together and season to taste

STEP 3:

3. mix the remaining ingredients and drizzle with the dressing

you can use your favourite beans here, butter beans, black beans, etc all work well.
