Step 1:

  • Saute 1/4 onion and 1/4 cup of corn in 1 tbs of olive oil. While
  • Step 2:

  • Place 1/2 refried beans in a large bowl and microwave for 1 minute.
  • Step 3:

  • Layer lettuce over beans.
  • Step 4:

  • Once done, later onions and corn over the lettuce.
  • Step 5:

  • Pour the desired amount of salsa (use as dressing)
  • Step 6:

  • Cut up a 1/4 of an avocado and layer over salsa.
  • Step 7:

  • Top everything off with a dollop of plain greek yogurt (a healthy alternative to sour cream).
