Meaty Couscous With Chorizo

Ingredients

  • 1 to 2 cubes of chicken or beef stock (a matter of preference)
  • 1/4 of a chorizo sausage
  • 1 regular mug full of plain couscous
  • hanful of frozen green veg if wanted (peas, green beans, brocolli etc.)

Instructions

  1. 1. Place mugful of plain couscous into pan with the ratio of 2:1 parts couscous to water.

  2. 2. Bring pan with couscous to the boil then turn down to simmer.

  3. 3. Crumble chicken or beef stock into the simmer pan of couscous and mix it in thoroughly to taste.

  4. 4. Dice chorizo sausage and toss into pan and stir.

  5. 5. From boiling to simmering it should take ten to fifteen minutes to cook couscous, it is done once it has expanded and absorbed the water. You should not need to drain water from couscous.

  6. 6. Whilst the pan is simmering either microwave or boil frozen veg if wanted and then drain add to couscous pan giving it one final stir.

  7. 7. Serve up and enjoy, all in under fifteen minutes.
