Mediteranian pasta sauce

A simple but yummy dish suitable for vegetarians!

Ingredients

  • olive oil
  • 1 can of tinned tomatoes
  • 2 Red peppers/ yellow peppers/ green peppers
  • 1 onion
  • 6 mushrooms
  • 1 garlic clove
  • 1 tsp origano or mixed herbs
  • pasta

Instructions

  1. 1) Chop onions and garlic, then put a squirt of olive oil in the sauce pan and cook the onions and garlic for 5 mins.

  2. 2) Next chop the peppers and mushrooms and add to the pan. after another 5 mins add the tinned tomatoes. Add the herbs, and simmer for 10 mins, stiring regularly.

  3. 3) Meanwhile cook the pasta (boiling in a pan for around 10 mins in water with a pinch of salt added).

  4. 4) plate up and enjoy

  5. I also find this recipe tastes extra yummy if, when you add the tomatoes, also add a teaspoon or two of either HP brown sauce or regge regge sauce 😉
