Mediterranean Pasta Salad

cheap, yummy, and no time at all

Ingredients

• serves two or one hungry person
• 1/2 cup penne pasta
• 2 tbs sun dried tomatos, chopped
• 1/2 small onion, sliced
• 1/2 green capsicum, sliced
• handfull of chopped parsley
• Sundried Tomato Dressing
• 1tbs sundried tomato pesto
• 1tbs white wine vinegar
• 2tbs olive oil

Instructions

STEP 1:

1. Cook pasta, uncovered until just tender. Drain.

STEP 2:

-If wanted cold- Rinse under cold water, then drain again.

STEP 3:

2. Combine all ingredients for dressing.

STEP 4:

3. Place pasta into mixing bowl with remaining ingredients and dressing.

STEP 5:

4. Toss gently to combine.

STEP 6:

Serve
