Step 1: 1. Chop potato into small cubes (the smaller the cubes, the quicker they will be to cook) and chop onion
Step 2: 2. Heat oil in the frying pan. Once heated add chopped potatoes and onions. Add garlic.
Step 3: 3. Keep stirring and fry until potatoes become clear and cooked. Add basil and oregano into the pan. (Salt and pepper can be added at this point too)
Step 4: 4. Pour chopped tomatoes, vegetable stock cube and tomato puree into a saucepan. Add potato/onion mixture into the saucepan and stir well.
Step 5: 5. Add boiling water, according to consistency. Bring to the boil, and simmer for 10 minutes.
Step 6: 6. Add mixture into a blender and blend to desired consistency.
