Step 1:

  • 1. Chop potato into small cubes (the smaller the cubes, the quicker they will be to cook) and chop onion
  • Step 2:

  • 2. Heat oil in the frying pan. Once heated add chopped potatoes and onions. Add garlic.
  • Step 3:

  • 3. Keep stirring and fry until potatoes become clear and cooked. Add basil and oregano into the pan. (Salt and pepper can be added at this point too)
  • Step 4:

  • 4. Pour chopped tomatoes, vegetable stock cube and tomato puree into a saucepan. Add potato/onion mixture into the saucepan and stir well.
  • Step 5:

  • 5. Add boiling water, according to consistency. Bring to the boil, and simmer for 10 minutes.
  • Step 6:

  • 6. Add mixture into a blender and blend to desired consistency.
