Home › Easy Dinners › Mexican bean soup for 2=D Mexican bean soup for 2=D RECIPE BY Guest Contributor Easy to make soup (I'm only 15) and surprisingly filling PREP 0 min COOK 0 min TOTAL 0 min YIELD 0 JUMP TO RECIPE SHARE Facebook Share on Facebook Twitter Share on Twitter Pinterest Share on Pinterest Email Share via Email Ingredients1 small red onion (normal onions wud b fine 2 i guess)1 clove of garlic (you cud probably use garlic powder) 200g of red kidney beanshalf a teaspoon of mild chilli powder(preferably you mite want to buy kidney beans in chilli sauce instead) 400g can of chopped tomatos1 veg stock cube and herbs if you want Instructions Step 1: 1. peel/chop onion finely. peel/crush garlic. Step 2: 2. cook onion and garlic for 5mins approx. until soft. (use oil or if you dont want the calories use some water) Step 3: 3 open and drain can of kidney beans in sieve/colander. rinse under cold tap. Step 4: 4. add beans and chilli powder and tomatoes. stir well. Step 5: 5. add 150 ml (1/4 pint) of boiling water to stock cube(crumbled) in measuring jug. stir. Step 6: 6. pour into pan. turn up the heat so it boils. once boiling turn down so that it bubbles gently. Step 7: 7. put a lid on the ban. bubble for about 10 mins. stir occasionally to stop sticking.
