Microwave Minestrone

Ingredients

  • A set of kitchen weighing scales (optional)
  • 1 large microwave proof bowl
  • 1 tbs Tomato puree (about 10-15g)
  • 1 clove of garlic
  • 1/2 stock cube (Chicken, beef, etc..)
  • Dried herbs (I just used parsley)
  • 50g frozen mixed peppers
  • 1 carrot
  • 40g fresh spinach
  • 25g dried pasta(I used the pasta shells)
  • 1/4 tin kidney beans(about 60g)
  • Speed vegetable peeler (optional)

Instructions

  1. Place the bowl on the weighing scales and set it to zero.

  2. Add the tomato puree, stock cube, and whatever herbs to the bottom of the bowl. Finely mince the garlic with a knife or use a crusher. Add it to the bowl as well.

  3. If you have a speed peeler you can use it to cut the carrot into ribbons, then stack the ribbons together and cut them into pieces. If you don’t have a speed peeler just chop the carrot into small pieces to help it cook quickly.

  4. Set the scales back to zero and begin adding the other ingredients: Frozen peppers, carrots, spinach, beans, and dried pasta. Remember to reset the scales back to zero after each ingredient.

  5. Add boiling water from the kettle to about 2-3 inches over the pasta and vegetables.

  6. Place uncovered in the microwave and cook for 10 minutes. If you’re not using a speed peeler for the carrots, check them for doneness as they may not be completely cooked.
