Step 1:

  • 1. Place the bowl on the weighing scales if you have them and set it to zero. Add the tomato puree, stock cube and whatever herbs you’re using into the bottom of the bowl. Finely mince the garlic with a knife or use a crusher if you have one. Add it to the bowl as well.

  • 2. If you have a speed peeler you can use it to cut the carrot into ribbons, then stack the ribbons together and cut them into pieces. If you don’t have a speed peeler just chop the carrot into small pieces to help it cook quickly.

  • 3. Set the scales back to zero and begin adding the other ingredients. Frozen peppers, carrots, spinach, beans and dried pasta. Remember to reset the scales back to zero after each ingredient.

  • 4. Add boiling water from the kettle to about 2-3 inches over the pasta and vegetables.

  • 5. Place uncovered in the microwave and cook for 10 minutes. If you’re not using a speed peeler for the carrots check them for doneness as they may not be completely cooked. Also check for seasoning which you can improve with salt and pepper to your liking.

  • By weighing out the ingredients you can work out how much this easy, filling and nutritious dish costs. Using these measurements and buying my shopping from Tesco I found that each bowl of this soup comes to around 61p per portion.
