Mouthwatering Mediterranean Tomato Dish

Lemon linguine with tomatoes and capers
Difficulty Level: easy
Ingredients
- Cooked this several times since ive been at uni and it is one of my favourite meals!
- it takes about 15 mins, costs no more than £2 and requires staple ingredients:
- linguine (or spaghetti)
- some olive oil
- 1/3 of a big onion
- 1 clove of garlic
- hint of chili powder (optional)
- (or, if you have fresh chili, bonus!)
- can of tomatoes
- 1 tsp capers
- a few olives (the 49p jar type will do fine)
- some cheese to top
- lemon
- salt and pepper
Instructions
Start to boil the pasta, meanwhile, heat the olive oil in a saucepan/wok.
chop the garlic, the onion; and then fry, stirring all the time, until golden. Then add capers, olives and chili.
once the olives have warmed up a bit, add the tomatoes and fry until they start to break down to form a thick sauce. Lower the heat and gently season with salt and pepper.
when the pasta has cooked, drain it a few times with hot water.
once well-drained, put the linguine in a dish and squeeze a little of the lovely lemon over.
pour on the sauce and sprinkle on some finely grated cheese. Beautiful!
*next time (once you know how easy the sauce is) replace the pasta with smoked haddock, it is a dinner to die for!
