This pea soup recipe is a simple and cheap veggie-friendly meal for those that want some comfort food after a long day.

STEP 1:
In a large pot over medium heat, heat up olive oil.
STEP 2:
Add onion and sauté for about 5 minutes, until soft
STEP 3:
Add garlic and cook for a minute, until fragrant
STEP 4:
Add the peas and vegetable stock, stir well.
STEP 5:
Bring to a boil, and then reduce to a simmer for 15 minutes.
STEP 6:
Remove from heat and cool for a few minutes.
STEP 7:
Pour the soup into a blender to smoothen.

Return the blended soup into a pot and place over medium heat.

Add your cream and seasonings to taste. heat for 2-3 minutes, stirring occasionally until warmed.
STEP 10:
Remove from heat and serve.

If you’re wondering if there’s a benefit of using fresh peas versus frozen, there isn’t any difference. Fresh peas will give you more bright and vibrant flavors while frozen ones will have a more concentrated sweetness, but there’s no real perk to having fresh rather than frozen.
