Mutton Soup

My absolute fave! Healthy, yummy and filling!
Difficulty Level: easy
Ingredients
- Mutton or lamb cut into small chunks. (You can use beef you prefer)
- Potatoes
- Sweet Potato
- Butternut Squash
- Carrot
- Cabbage
- Berlotti Beans
- Garlic
- Thyme
- Salt & Pepper
- Flour
- Water
- Salt
- Beef or Lamb oxo cubes
- All purpose seasoning
- Chilli Powder
- Coconut Milk
Instructions
2 hours prior to cooking the meal put the meat into a pan and thoroughly cover with water so there’s about 2 inches of water above the meat. Sprinkle into a decent amount of thyme with salt and pepper. Chop up four cloves of garlic and grind and add this in. Cover and boil on a low heat for 2 hours until soft. No body likes tough meat.
Sprinkle roughly four beef or lamb oxo cubes and some all purpose into the water to thicken it up slightly and add flavour to the meat. Boil for another 20 minutes.
Whilst this is boiling chop up the potato, sweet potato, butternut squash and carrot into medium sized chunks and put into the pan. Also chop up the cabbage but leave until a bit later.
Add the berlotti beans into the pan and the coconut milk and stir. Add a light sprinkle of chilli powder or however much you like depending on how spicy you want it.
Leave this to boil for half an hour. Now add the cabbage and stir.
To make the dumplings, make a dough using plain flour, and salted water. Roll between your hands and add more flour so it’s not sticky. Pull little sections from the dough and roll to make round dumplings about the size of a marble. You can make them bigger if you like.
Leave to boil for another 20 minutes.
Your soup should now be done. Yummy! Enjoy and dunk in some bread!
