Oat Breakfast Bars

Ingredients

  • 2 cups of (rolled) oats.
  • 2 cups of milk.
  • dried fruit.
  • nuts -optional-.
  • 2 tablespoons of granulated sweetener (or sugar, but this is a bit more unhealthy).
  • 1 tablespoon of butter or margarine -optional-
  • 2 teaspoons of vanilla extract -optional-.
  • 1 large mixing bowl.
  • 1 small microwavable container
  • a spoon (wooden or just a tablespoon).
  • a baking sheet.
  • an airtight container

Instructions

  1. Put all the dry ingredients into the bowl.

  2. add the milk and vanilla extract into the dry ingredients and mix well.

  3. melt the butter/margarine (a few seconds in the microwave should do it) and add into the mixture. Stir again.

  4. spread out evenly on a lined baking sheet. Lining it with foil works best because greaseproof paper can get soggy from the milk. If you have a larger baking sheet, the mixture might not cover the whole of it.

  5. bake for 20 minutes on 190°c or until golden brown.

  6. cut into squares or rectangles while it’s still hot.

  7. it might look like it’s too squidgy and like it won’t stick together at first, but don’t worry! Once it’s cooled down, the oats stick together better.

  8. sometimes i like to sprinkle a little more sweetener on top and even a little bit of cinnamon!

  9. store in an airtight container in a cool, dry place. Consume within 1 week.

  10. i like to bake a batch at the weekend then eat them in the morning when i’m too busy to sit down and eat!
