Ingredients

  • 8 oz elbow macaroni
  • 2 cups sharp cheddar cheese, grated
  • 2 cups milk
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup breadcrumbs (optional, for topping)

Instructions

  1. Preheat your oven to 350°F.
  2. In a large pot, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
  3. In a saucepan over medium heat, melt the butter. Whisk in the flour and cook for about 1 minute until lightly golden.
  4. Gradually whisk in the milk, stirring continuously until the mixture thickens and is smooth. Add the salt, pepper, and paprika.
  5. Remove the saucepan from heat and stir in the grated cheddar cheese until melted and well combined.
