1.) dice the veg and cut the chicken into smallish chunks (chorizo as well).
Step 2:
2.) fry off the chicken (and chorizo) for 5 mins, then add the onion, pepper (and mushroom). Leave to sweat until veg is soft and chicken has started to brown ever so-slightly.

3.) add the chicken stock to the pot and the mug of rice. (don’t worry if it looks like you’ve drowned the rice! All part of the recipe!)

4.) add all the seasoning and allow the rice to soak in the flavours until fully cooked!

you will need to top up the water every now and then to ensure the rice doesn’t stick to the pan.. Super easy and tastes so good!
