Ingredients

  • For the pancake mixture:
  • 110g/4oz plain flour, sifted
  • pinch of salt
  • 2 eggs
  • 200ml/7fl oz milk mixed with 75ml/3fl oz water
  • Butter for frying
  • To serve:
  • Lemon juice
  • Sugar

Instructions

  1. 1. In a bowl whisk the eggs and milk together

  2. 2. Whisk in the flour

  3. 3. In a pan melt the butter then fry a little of the batter in it as a tester

  4. 4. If the tester works out well, pour some mixture in the pan and spread around leave until golden then turn over

  5. 5. To keep warm pre-heat the oven to gas mark 5, 50C* and place the pancakes on a warm plate

  6. 6. Sprinkle lemon juice and sugar on top or be adventurous and try Tomato ketchup
