Ingredients
- For the pancake mixture:
- 110g/4oz plain flour, sifted
- pinch of salt
- 2 eggs
- 200ml/7fl oz milk mixed with 75ml/3fl oz water
- Butter for frying
- To serve:
- Lemon juice
- Sugar
Instructions
1. In a bowl whisk the eggs and milk together
2. Whisk in the flour
3. In a pan melt the butter then fry a little of the batter in it as a tester
4. If the tester works out well, pour some mixture in the pan and spread around leave until golden then turn over
5. To keep warm pre-heat the oven to gas mark 5, 50C* and place the pancakes on a warm plate
6. Sprinkle lemon juice and sugar on top or be adventurous and try Tomato ketchup
