Blend all the ingredients. (Or mash the banana before whisking in the egg and baking powder)
Meanwhile, heat a non-stick pan over high heat (or add a generous amount of non-stick spray)
Add dollops of the banana mix, and leave for 2 minutes before flipping and cooking for a further two minutes.
Put in a pot or on a plate, drizzle with the sauce of your choice/yogurt, fresh berries, the possibilities are endless.
