Pancetta Pasta for 4

Twist to normal pasta, has a nice kick to it and cheap!

Ingredients

  • 2 packets of pancetta
  • onion
  • pinch of chilli flakes
  • passata sauce
  • cap of vodka
  • penne pasta
  • olive oil
  • 15oml double cream

Instructions

  1. 1. fry pancetta in olive oil until brown.

  2. 2. add the onion to the pancetta and cook for 5 mins.

  3. 3. add the chilli flakes, passata sauce and 1 cap of vodka to the pancetta and allow to simmer

  4. 4. While this is simmering boil the pasta until nearly cooked.

  5. 5. when the pasta is nearly cooked pour in the cream to the passata sauce and cook for a further 3 mins.

  6. 6. drain the pasta.

  7. 7. mix the sauce to the pasta and serve.

  8. *NB the vodka does not need to be added, but it gives a great kick to the sauce.

  9. (great served with green salad or focaccia bread!)
