Step 1: 1. fry pancetta in olive oil until brown.
Step 2: 2. add the onion to the pancetta and cook for 5 mins.
Step 3: 3. add the chilli flakes, passata sauce and 1 cap of vodka to the pancetta and allow to simmer
Step 4: 4. While this is simmering boil the pasta until nearly cooked.
Step 5: 5. when the pasta is nearly cooked pour in the cream to the passata sauce and cook for a further 3 mins.
Step 6: 6. drain the pasta.
Step 7: 7. mix the sauce to the pasta and serve.
Step 9: *NB the vodka does not need to be added, but it gives a great kick to the sauce.
Step 11: (great served with green salad or focaccia bread!)
