Spanish Omlette

Ingredients

  • 4 eggs
  • splash of milk
  • 2 potatoes
  • 1 onion
  • any left over veg

Method

peel and boil potatoes for 10-20 minutes, if theyre big hack them into smaller pieces

once soft enough to cut but not so soft theyre mushy, chop into cubes no larger than 2cm squared

chuck in frying pan with some salt and oil until browned and a little crispy

chop up the onion and other veg to similar size

throw all the veg in a baking tin

mix the milk and egg like you would for scrambled eggs, then pour over veg

bake for 15 minutes

its yummy cold and hot so great as leftover snack or chop it up and serve it at parties when youre super broke
