Sweet Potato Pancakes

Try these for a veggie boost on pancake day!



  • 180g self raising flour
  • 1/2 tsp nutmeg
  • 60g butter, melted
  • 1/2 tsp ginger
  • 300g cooked sweet potato, mashed
  • 2 eggs, beaten


1) whisk together the eggs and milk in a jug

2) combine all the dry ingredients together then gradually whisk in the liquid and then add the mashed sweet potato. Dont worry too much if you have a few lumps

3) heat a frying pan on medium heat with oil, then add 1 ladel of the thick batter. Cook for around 2-3 mins on each side, or until golden and bubbling.
