Pasta with creamy, peanutty pork

Simple, relatively quick, and does the job 😉

Ingredients

  • To serve one person:
  • About 200g or so pork (a large pork chop stripped of fat and bone should do the job, for example)
  • One yellow pepper
  • three largeish spring onions (or four medium ones)
  • 2 tbsp crunchy peanut butter
  • 7-9 tbsp semi-skimmed milk
  • one to two cups of pasta twists
  • 1-2 tbsp cooking oil (Olive oil is the best for all things IMO)
  • Some salt

Instructions

  1. Chop the pork up into small cubes and dice the pepper and spring onions.

  2. Add salt to the pasta to personal taste and set to the boil. As it starts to boil, heat up the oil in a second pan.

  3. Add the pepper and pork to the second pan and fry until brown (about 5mins should do the job)

  4. Add the spring onions and continue frying for another 3mins or so, then turn the heat down.

  5. Add the peanut butter and milk and stir until a sauce has formed out of the two, and blended into the other ingredients

  6. Place the peanutty pork on top of the pasta in a large dish and serve.
