Published Sunday, 29 January, 2012 by Claire Farquhar

Spicy tomato pasta - low fat, great taste!

  • Serves 2
  • Pasta (I think penne is best)
  • 1 Large Red Pepper
  • 1 Red Onion
  • 2 Fresh Garlic Cloves
  • Pack of Passata
  • Olive Oil
  • Crushed Chillies
  • Cayenne Pepper
  • Italian seasoning (or oregano and basil)
  • Pinch of sugar
  • Mozzarella (optional)

Boil a pan of salted water and add pasta

Heat a wok/pan to a moderate heat and add chopped onions and garlic and olive oil.

Cook until onions are softened then add pepper.

Once veg is cooked at pack of passata 3/4 of a pack is sufficient. sprinkle a tiny bit of sugar into sauce - brings out tomato flavour!

Season with crushed chillis(generously) and cayenne pepper.

leave to simmer until pasta is ready - then drain the pasta and mix in with the sauce.

Take off the heat and mix in a generous amount of italian seasoning. Serve and sprinkle with grated mozzarella!

(i actually use this as a 1 person meal then keep the left for the next day as it still tastes great and is good for packed lunches for when you're skint!)
