Chicken And Pasta Bake

  • chicken breast fillets, cut into pieces
  • 2 courgettes, diced
  • fine green beans, cut in half
  • 3tbsp roasted red pepper pesto
  • 350g mascarpone cheese
  • 250g pasta
  • 3-4 medium sized potatoes
  • cheese
  • butter milk


first cook your chicken in a pan with olive oil until it goes brown

add the courgettes and beans and cok for 3-4 mins until softened

in a bowl mix together the roasted red pepper pesto and the mascarpone cheese then pour into the pan and simmer for 5-6 mins whilst stirring occasionally

whilst doin this cook the pasta according to the packet and add some salt

drain the pasta when done and add to the chicken add more salt according to your tatse

put in the fridge whilst making the potatoes so the sauce sets a bit

peel and chop the potatoes and then put in a pan of boiling water and wait for them to cook, when they are cooked drain them and put them back into the pan

add a small nob of butter and a dash of milk to make the potatoes creamy and mash together. Then season with salt pepper etc

then take the pasta out of the fridge and put in an oven proof dish then spread the pototoes on top evenly and top with a sprinkle of cheese put in the oven on about 200degrees and bake for 15-20 mins until the cheese has melted..

it might seem a bit complicated but it is definately worth it
