Easy Alla Matriciana Pasta

  • 1 small capsicum, sliced
  • 1 tin tomato soup
  • 1 tin crushed tomatoes
  • 2 rashers bacon, diced
  • 1 medium onion, diced
  • 1 teaspoon crushed garlic
  • 500g pasta of your choice
  • grated cheese to top
  • optional:
  • 1 small chilli, finely diced with seeds removed
  • 500g chicken breast, diced (if you want to add more substance)


1. Heat oil in pan; fry onion and garlic until onion is soft. (add the chilli here if you choose to use it).

2. Add bacon, fry for ~2 minutes. (pan may look like it is burning, but it's just caramelising).

3. If you are using chicken, add it here, and fry until cooked through.

4. Add capsicum for ~1 minute.

5. Add tins of tomato soup and crushed tomatoes; simmer.

6. Cook the pasta as per packet instructions.

7. Serve topped with cheese! Enjoy!! :)
