Easy-peasy Pesto Pasta

Published Thursday, 03 September, 2009 by Kath

Soooo much tastier than the jar version!

  • 4 tablespoons Pine nuts
  • 25ish fresh basil leaves (depends on the size of the leaves! If they are small, make it 30, or whatever feels right)
  • 4 tablespoons of olive oil
  • 4 tablespoons of grated parmesan cheese (the fresh stuff, not that nasty pre-grated-in-a-shaker-tub stuff)
  • some salt
  • (all the above amounts are just approximate and are enough for one person, guess the amounts if you like, I do, it makes it much more fun as you get to keep tasting it while you're creating!)
  • Enough pasta for one person

1. Cook your pasta

2. While the the pasta is cooking, blend together all the other ingredients in a food processor until they are really well blitzed.

3. Try the sauce, and if you want to add more of any of the ingredients, do so!

4. Once the pasta is cooked to your liking, drain, and mix the pesto in while the pasta is still really hot.

5. Tuck in!
