lightly grease a deep baking/casserole dish, preheat oven to 180oC.
start by frying the onion, garlic and mushrooms in a fryin pan until the onion is clear. add the mince and stir until the meat is just-brown (if you over cook it, it will dry out when u bake it)
add the tomatoes, paste and carrot and str through. add water/goon (or any other white wine) and let simmer while you prepare the cheese sauce.
mix the melted butter & flour in a microwavable container/jug until it forms a paste. add small amounts of milk & stir until you have a lump-free mixture. add egg and cheese and microwave in 1 minute bursts, stirring in between, until it has a yogurt-like consistency.
now, place a layer of lasagne sheets, meat, lasagne etc until meat is gone and the final layer should be lasagne. spread cheese sauce over top and sprinkle with more cheese.
bake until cheese is golden. serve with vegies, chips/fries... whatever u like!! this can be frozen/refrigerated, so it'll feed you for days!!
