Ingredients

  • 100g / 4 oz soft tub margarine
  • 100g / 4 oz crunchy peanut butter
  • 100g / 4 oz soft brown sugar
  • 100g / 4 oz caster sugar
  • 2 eggs
  • 275g / 10 oz plain flour
  • 2.5 ml / half level tsp baking powder
  • 2.5 / half level tsp bicarbonate of soda
  • Pinch of salt
  • Granulated sugar

Instructions

  1. Place margarine , peanut butter ,sugars and eggs in mixing bowl and beat all together until thoroughly combined.

  2. Add flour, baking powder ,bicarbonate of soda and salt, stirring in with a fork to form soft dough.

  3. Roll dough into small balls the size of small walnuts. and place well apart on greased baking sheets.

  4. Use a fork to press down and form a criss-cross pattern on each cookie. Sprinkle on tops with granulated sugar.

  5. Bake until risen and lightly brown.

  6. Cool on wire rack.
