Pineapple Upside Down Cake

A sweet, chewy and pineapple flavoured cake.

Ingredients
- 1 can pineapple,either rings or tidbits
- 3 tablespoons butter
- 1/2 cup brown sugar
- 1/3 cup margarine
- 1/2 cup white sugar
- 1 egg
- 1 teaspoon vanilla essence
- 1 cup flour
- 1 1/4 tsp baking powder
- 1/4 tsp salt
Instructions
1) Melt butter and stir in brown sugar. Pour into 9 inch square pan.
2) Drain pineapple, reserving 1/2 cup of syrup. Arrange pineapple in bottom of pan.
3) Cream together butter and sugar until smooth. Add egg and vanilla. Beat.
4) Add dry ingredients plus 1/2 cup of syrup. Mix.
5) Bake 40-45 minutes at 350 F. Cool before inverting onto a plate.
