Pineapple Upside Down Cake

Ingredients

  • 1 can pineapple,either rings or tidbits
  • 3 tablespoons butter
  • 1/2 cup brown sugar
  • 1/3 cup margarine
  • 1/2 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla essence
  • 1 cup flour
  • 1 1/4 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. 1) Melt butter and stir in brown sugar. Pour into 9 inch square pan.

  2. 2) Drain pineapple, reserving 1/2 cup of syrup. Arrange pineapple in bottom of pan.

  3. 3) Cream together butter and sugar until smooth. Add egg and vanilla. Beat.

  4. 4) Add dry ingredients plus 1/2 cup of syrup. Mix.

  5. 5) Bake 40-45 minutes at 350 F. Cool before inverting onto a plate.
