Step 1:

  • 1. Season pork with soy sauce, salt, and pepper. Leave covered in refrigerator for 30+ minutes.
  • Step 2:

  • 2. After pork is done marinading, put on rice and heat up 1 tablespoon of oil in a wok/ non-stick frying pan.
  • Step 3:

  • 3. Fry the pork for 3-5 minutes until cooked through, then remove from pan and put in a separate bowl.
  • Step 4:

  • 4. Heat up another spoonful of oil, then fry the onion until browned. Add the ginger, garlic, and green onion and fry for a further 2-3 minutes.
  • Step 5:

  • 5. Add the tomato and cooked pork to the wok and fry until warm.
  • Step 6:

  • 6. Stir the egg with salt and pepper in a separate bowl, then add to the wok until cooked.
  • Step 7:

  • 7. Season to taste, then serve with rice.
  • Step 8:

  • other vegetables would go nicely with this, including broccoli, green beans, carrots, and many more!
