firstly but your potatoes and carrots (seperate pans)on to boil
Then fry your pork a with 2 tble spoons of oil for 3-4 mins
then place the pork in an oven dish with tinfoil over the dish and leave on a low heat while you prepare the rest.
cook the diced oinions and mushrooms in a pan slowly adding a little butter (to stop them sticking)
then add 2tbl spoons of veg stock and concentrate it with water. Let this simmer for about 5 mins then add the dollop of mustard,the creme fraiche, the tarragon and simmer for a further 10 mins on a low heat.
Then when your potatoes and carrots are done;
mash the potatoes-take out the pork and drizzle with the sauce and serve with the carrots-
easy and it only takes roughly half an hour (prep before hand)
