Smoked Paprika Pork

Published Sunday, 06 March, 2011 by Georgia

Delicious one pot dinner with plenty of veg!

  • To make 4 servings (so there's plenty to freeze!):
  • -1 tbsp flour
  • -850g diced pork
  • -3 tbsp vegetable oil
  • -4 medium potatoes, chopped into chunks
  • -2-3 peppers chopped
  • -2 red onions chopped
  • -2 cloves garlic, crushed
  • -2 tsp smoked paprika
  • -300ml chicken stock
  • -Sour cream and parsley to garnish (Optional)

Season the pork in the flour.

Heat 2 tbsp of oil in a pan and fry the pork over a high heat until browned.

Add the remaining oil to the pan, with the potatoes, peppers, onions and garlic and cook for 5 minutes until soft and golden.

Add the paprika and cook for 1 minute. Add the stock, two small bay leaves, season and bring to the boil.

Cover and simmer for 2 hours until the pork is almost tender.

Add the peppers and simmer for a further 30 minutes, uncovered.

Garnish with a spoonful of sour cream stirred in and a sprinkle of parsley.

[Goes really well with rice!]

Sorry! I completely forgot the bay leaves in the ingredients, and I typed the recipe up wrong the first time and redrafted it, the second peppers shouldn't be there but I missed them in the editing. I was going to change it but literally everything I put on here gets marked as spam instantly and I don't know why, so it wont let me save any changes :(

Why have you added peppers twice? first with the potatoes, onions etc. And then right at the end...? Looks tasty though!nAlso - you didn't include bay leaves in the ingredients list so I didn't buy any!
