Step 1: Squeeze the tomatoes to bring out the flavor and then put everything but the fish in a pan with a tight fitting lid.
Step 3: Bring the contents of the pan to the boil on the hob while preheating the oven to 180.C (fan oven)
Step 5: Once the contents of the pan are boiling add the fish and place the pan on the middle shelf of the oven for 15-20 minutes.
Step 7: Taste the fish and juices, season to taste and serve fish and tomatoes with a little juice.
Step 9: Certainly one to impress, just find something nice to go with the fish and tomatoes.
