Potato Bhaaji

Ingredients

  • 2 or 3 large sized potatoes
  • 2 medium sized onions
  • 1 teaspoon turmeric powder
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • 1 teaspoon chilli powder
  • 1 teaspoon cumin seeds
  • 2 tablespoon salt for boiling
  • 1/2 teaspoon salt for the Bhaaji
  • 1 tablespoon oil
  • some freshly chopped coriander/ cilantro for garnish

Instructions

  1. Wash and then boil the potatoes with 2 tablespoon salt till well done. once cooled, remove the peel and discard. Dice the boiled potatoes into tiny bite sized pieces. Keep aside. Thinly slice the onions.

  2. In a pan, put the oil and let it heat on medium heat. Add the cumin seeds and wait for a little splatter. Add the ginger and the garlic paste and fry for a minute. Add the turmeric and the chilli powder and mix. Add the onions and fry till transluscent. Once done, add the potatoes and toss among the onions coating it well with the turmeric. Add salt and toss around.

  3. Garnish with freshly choped coriander/ cilantro.

  4. PS. this recipe can be eaten with bread, naan or like the south Indian’s eat it, in a savoury pancake called the Dosa.
