Primevera Pasta Sauce

An easy to make but tasty pasta sauce rich with vegetables

Ingredients
- Serves 2-3
- 1/2 can pasta sauce or Half can diced tomatoes
- 1 spanish (red) onion
- 1/2 teaspoon oregano
- 1/2 teaspoon basil
- 1/2 teaspoon thyme
- 3-4 cloves garlic
- 1 cup mushroom
- 1/2 – 1 Red/Green Pepper (optional)
- 1 cup chopped spinach
- Olive Oil
- Grated Mozzarella Cheese
- Salt and Pepper
- For Non-Veg add:
- 4-6 strips bacon
- 3-400g Ground Beef
Instructions
Preparation:
Cut all vegetables and have them set aside. Cut the bacon strips into 1 inch pieces. Press the garlic (this is suggested over cutting). And you are ready to start cooking!
Cooking:
In a saucepan or frying pan, put one tablespoon of olive oil in the pan, heat until oil flows easy (7-8). Add onions, (Bacon and Beef if non veg). Let onions simmer for 5 mins or till they brown, (same with meats). Add Basil, Oregano, Thyme, and Garlic; blend well with onions (and meat). Add mushrooms and peppers, cook till both become supple (about 4-5 mins). Add spinach and a little bit of water. Cover for 2 mins to let the flavours sink into the veggies (and meat). Pour sauce or diced tomatoes over ingredients, turn to low (3-4) heat and let simmer for 3-4 mins. Finally, add the desired amount of grated cheese and mix until melted and blended well. Then pour the sauce over desired pasta. Enjoy!
