Ingredients

  • 3 lbs pork shoulder
  • 1 tablespoon paprika
  • 1 tablespoon brown sugar
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup barbecue sauce
  • 6 hamburger buns
  • 2 cups coleslaw mix
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • Salt and pepper to taste

Instructions

  1. Preheat your slow cooker on low. Mix together paprika, brown sugar, garlic powder, onion powder, salt, and pepper. Rub this mixture all over the pork shoulder.
  2. Place the seasoned pork shoulder in the slow cooker and pour barbecue sauce over it. Cover and cook on low for 8-10 hours, until the pork is tender and easily shredded.
  3. Once cooked, remove the pork from the slow cooker and shred it using two forks. Mix the shredded pork with the remaining barbecue sauce in the cooker.
  4. In a separate bowl, combine coleslaw mix, mayonnaise, apple cider vinegar, sugar, and season with salt and pepper. Mix well.
  5. To assemble, place a generous portion of pulled pork onto each hamburger bun and top with coleslaw. Serve immediately.
